Pandalus borealis is fished in cold northern waters and cooked on board, which is what gives it the firm bite and clean sweetness that warm-water farmed shrimp cannot match. Count per kilo is the price driver: a 60/80 count and a 150/250 count are entirely different products.
Peeled product is sold either in brine or dry IQF. Brine weight and glaze both inflate declared weight, and both must be stated. We convert every offer to a net drained-weight basis before comparison.
