A whole fjord trout on wet granite with a Norwegian fjord behind

Fjord trout is farmed in brackish fjord water and reaches a noticeably deeper red-orange flesh colour than salmon at the same feed regime. Japanese and Korean sashimi buyers pay a premium for it, and European smokehouses use it where salmon reads as too commodity.

Total Norwegian production is a small fraction of salmon volume. Continuous programmes therefore need to be contracted ahead of the harvest window rather than bought on the spot market, and a buyer who wants weekly volume should expect to commit for a quarter or more.
