A species page tells you what the fish is. This is what is actually traded — the forms, trims and size bands a supplier quotes against, each with the specification fields that decide the price and the mistake that most often turns into a claim.

Fresh HOG salmon, superior grade
The standard export form, and the one where the size band matters more than anything written above it.

Salmon fillet, trim D
The workhorse of retail and food service. Closely trimmed, and the specification most buyers mean when they say “fillet” — with pin bone status stated separately.

Fully trimmed and skinless. The highest yield loss in the plant and the lowest waste in the kitchen.
