High-fat, deep-water flatfish with a tightly regulated fishery. Almost entirely frozen at sea and sold on size grade.
Greenland halibut is a cold, deep-water species with a fat content that makes it the preferred raw material for smoking in Eastern Europe and for grilled cuts in East Asia. The Norwegian fishery is quota-limited and concentrated in a short directed season, with the rest taken as bycatch.
Size grade drives price more sharply than in any other whitefish. A 1–2 kg fish and a 3–5 kg fish are separate markets, and mixed lots are the most common reason an offer that looked cheap turns out not to be.
