Saltfish is split and wet-salted; klippfisk is the same fish dried down further to a stable moisture level. Both are centuries-old Norwegian export products with buyers who know exactly what they want and will reject on appearance alone.

Portugal and Brazil want cod, white and evenly salted, in specified cuts. West Africa and the Caribbean take saithe at a different price point. Moisture and salt percentage decide the class, and both must be declared and verified before shipment — not estimated.
