Stockfish is unsalted cod hung on outdoor racks in Lofoten from February and dried by cold coastal air over roughly three months. Nothing is added and nothing is removed; the entire product is weather and time. Yield is around one fifth of the round weight, which is why the kilo price bears no relation to fresh cod.
Grading is done by hand and follows a classification with more than twenty classes — Ragno, Westre, Bremer, Hollender and others — each with its own size range, damage tolerance and destination market. Italy buys the top grades; Nigeria and Croatia buy different parts of the same fish. A buyer who orders on species alone will receive something, but not what they expected.
