Frozen head-on gutted salmon is raw material rather than a finished product: it goes to cutting lines in Vietnam, Thailand, China and Poland to be filleted, portioned, smoked or packed, and much of it is re-exported afterwards. The buyer is not paying for presentation. They are paying for how many kilos of saleable fillet come off a hundred kilos of input, which makes size consistency, freezing method and the declared freezing history the three fields that decide the price.

What goes wrong on this product
Double-frozen material bought as single-frozen is the most common documentation dispute in this trade, and it surfaces at the re-export border rather than at the plant — by which point the goods have been cut and the evidence is gone. We require the freezing history in writing before the offer is passed on.
