The entry product for any market where the cold chain is still being built. Long shelf life is the specification, not a bonus.

Fixed-weight portions are cut to a stated gram weight and either interleaved or individually quick frozen, and they are what makes salmon workable in distribution that cannot turn fresh product over fast enough. Portion control is the commercial point: a restaurant that plates a 140 gram piece knows its food cost to the cent, and a retailer selling a fixed pack knows its margin. Where the market is new, this is almost always the format that works before fresh whole fish does.

What goes wrong on this product

Glaze is water, and an undeclared 10 per cent glaze makes an offer look 10 per cent cheaper than it is. Every offer we pass on states the glaze percentage and quotes net of it. An offer that does not is not cheaper — it is incomplete, and we go back for the number rather than forward with the quote.
